Saute of Zucchini, Bell Peppers, and Red Onion

minutesI love this because you can turn it into whatever you want. You can saute all these vegetables and add eggs for a scramble or frittata or add leftover rice and turn it into fried rice or add some spice and make vegetable taco’s. I sometimes when in a hurry or if I know I have a crazy day I buy the fresh grocery prepped vegetables and saute those and serve over noodles or polenta. Use whatever seasoning or herbs you would enjoy.
Ingredients
2 zucchini, trimmed and sliced or spiraled
2-4 bell peppers, trimmed, seeded and sliced
1 red onion, skinned and chopped or sliced
Fresh herbs chopped or seasoning of choice
2 tablespoons olive oil
Directions
- In a large saute pan, warm the olive oil over medium high. Add the onions and peppers and cook for 5 minutes. Reduce the heat to medium and add the zucchini. Add in the seasoning of choice and stir occasionally until vegetables are tender. If you want them to caramelize, turn the heat to medium-med high and watch them so they don’t burn.
- You can always add some wine or finish with a littles salted butter. Once ready serve with fresh cut herbs and finishing salt.
