Simple Cream Cheese Frosting with Jam

minutesMy daughter and I made cup cakes and we did not have any food coloring which came to mind as an after thought. We made this frosting and she was quite upset we couldn’t make it pink or purple. So I grabbed some raspberry jam a friend had made for us and beat it in, not only did it make a lovely color that we both loved, the taste was great. Since then we have experimented with jams and jellies. It is better to use jams and preferably jams without large pieces of fruit. This makes enough to frost 12 cupcakes or 1 8 inch layer cake. When making frosting for cakes, I always double because I like to do a base layer of frosting them go over it again so it is polished looking.
Ingredients
1/2 cup unsalted butter, room temperature
8oz cream cheese, left out about 20 minutes
4 cups powdered sugar
2 teaspoons vanilla extract
2 teaspoons to 1 tablespoon raspberry jam or your favorite jam
Directions
- Beat the room temperature butter and cream cheese together until well combined.
- Add the powdered sugar and vanilla and beat until creamy
- Add in the jam and again beat until well incorporated
