Toasted Sesame Seed Snap Peas

minutesThis recipe came together without really thinking. I was making a delicious shrimp Indian dish and needed a green vegetable and had bought a surplus of sugar snap peas at the Healdsburg Farmer’s Market. I took them and trimmed them. I placed them on a cookie sheet and tossed them with olive oil, salt and pepper. I added some tomato powder and a touch of roasted garlic powder. I wanted them to have some texture so I added some toasted sesame seeds. I roasted the peas until slightly until lightly blistered and brown.
Ingredients
8 oz sugar snap peas, trimmed
1 tablespoon olive oil or avocado oil
1 1/2 teaspoon toasted sesame seeds
1 1/2 teaspoon tomato powder
Salt and fresh ground pepper
1 teaspoon roasted garlic powder
Directions
- Preheat an over to 425. Line a baking sheet with parchment paper. Place snap peas on prepared pan, and toss with oil and the rest of the ingredients.
- Roast until lightly browned and blistered. Serve hot or cold.
