Mango Vanilla Tea Cake

minutesThis is a light, flavorful tea cake to be enjoyed in the morning, afternoon or for dessert. This cake is delicious with the jam (i mixed in a little raw honey) on top or with the frosting. My kids enjoyed it afterschool and I made a loaf for an older neighbor who had ladies over for coffee and they enjoyed it as well. It is rather pretty so would be wonderful to serve at a bridal or baby shower.
Ingredients
2 1/3 cups cake flour
1 Tablespoon baking powder
1 teaspoon ground cardamom
1/2 teaspoon Kosher salt
1 cup sugar
1 cup nonfat vanilla greek yogurt
1 cup vegetable oil
2 leg eggs
1 teaspoon vanilla
3 Tablespoons warmed mango jelly or preserves
- Mango Lassi Frosting
1 cup powdered sugar
1 1/2 Tablespoons mango jelly or preserves
1 Tablespoon nonfat Greek vanilla yogurt
3 teaspoons lemon juice
Directions
- Preheat oven to 350. Coat a 9×5 inch loaf pan with a heavy layer of baking spray. Set aside.
- In a medium bowl, whisk together flour, baking powder, cardamom, and salt.
- In a large bowl, whisk together sugar, vanilla yogurt, oil, eggs, and vanilla extract. Gently add the flour mix and stir together. Do not over stir, some lumps are ok. Pour into prepared pan. Tap pan on counter to remove air bubbles.
- Bake in oven until a toothpick comes out clean when stuck in the middle about 50 minutes. If cake is getting too brown, cover with foil the last 5 minutes. Let cake cool in pan for ten minutes, then remove from pan and while the cake is hot brush with warmed mango jelly. Allow to cool completely, about 2 hours.
- When cake is cooled, Make the frosting and cover the cake with frosting and a garnish of lemon zest and mango slices
- Frosting
- Stir together the powdered sugar, mango jelly, and vanilla yogurt until just combined. Gradually whisk in lemon juice until frosting is thick more like icing. Spoon the icing over the cake and garnish with lemon zest and mango slices. Cake can be made 1 day ahead wrapped in plastic wrap and kept at room temperature.
