Jazzed up Rotisserie Chicken

minutesWe all have been there, we want to feel our family a healthy meal but don’t want to cook or get food to go. This is the best of both worlds. I buy a rotisserie chicken and cut it up. I place it in a roasting pan with fresh herbs, onions, and carrots and potatoes and lots of citrus. If I have white wine open, i’ll add some to the pan. Place the chicken in there and cover tightly with foil. Allow to reheat for 30 min. Remove foil crank up the heat and allow to cook for 5-8 minutes. Dinner is served!
Ingredients
1 or 2 Rotisserie chickens
Lemons/Limes, cut in half, sliced and 1 or2 juiced
Handful of fresh herbs of choice
Onions sliced, sm potatoes quartered, carrots, celery, fennel bulb quartered, shallots
1/4 cup to 1 1/2 cups white wine or chicken broth
Directions
- Preheat oven to 300.
- In a roasting pan add all the ingredients you choose. Cut up the chicken/chickens and place on top of everything in the pan. Add the wine or broth and cover tightly with foil.
- Cook for 30 minutes, remove the foil and crank the heat up to 375 for 5-10 minutes.
- Serve with vegetables in the pan and the lovely juices from all the good stuff in the pan. If not using potatoes, serve with polenta, cous cous, or rice.
