Vegan PB Maple Ice Cream

minutesThis ice cream has great flavor but is somewhere between a granita and ice cream. It does lack a creamy texture but flavor is so good. My kids really enjoyed it. I will make again on a hot day where it would be delicious and cooling.
Ingredients
3/4 cup maple syrup
2 cups unsweetened oat milk
1 cup smooth peanut butter, preferably not natural
1 teaspoon vanilla
Pinch of salt
Directions
- Pour the maple syrup in a saucepan and over medium heat bring to a rolling boil. Once bubbly, lower heat and simmer until reduced to 1/2 cup, maybe about 12 minutes. Set aside to cool.
- In a blender add the syrup, oat milk, peanut butter, vanilla, and salt. Puree until it is frothy and creamy like.
- Pour into a loaf pan or ice cream container and freeze for 4-6 hours or overnight. Allow to sit on counter for 10-15 minutes before serving.
