Peanut Butter Banana Bread

minutesThis recipe comes from a favorite book, I bought a few years ago with my then young daughter, Banana Breads, Loaf cakes and Other Quick Breads. It is a great book and every recipe is fabulous. This happens to be one of our favorites. The bread is great in the morning with a bowl of fruit and yogurt or in the afternoon as an after school snack. The kids also love it in their lunch and pack extra slices for their friends. This recipe doubles well, and if doubled will make 3 large breads. I have made this using both smooth and crunchy peanut butter and don’t really use the salted peanuts because my kids don’t want them. I have used chocolate chips which is great and also added some vanilla paste.
Ingredients
3 1/2 Tablespoons salted butter, melted
3 very ripe bananas
1/2 cup + 1 Tablespoon crunchy peanut butter
1/2 cup sugar
1/2 cup light brown sugar
1 Tablespoon baking powder
1/2 teaspoon sea salt
2 eggs
2 tablespoon salted peanuts or chocolate chips
1 tablespoon vanilla sugar for sprinkling before cooking, optional
Directions
- Preheat oven to 375. Spray a 9×5 loaf pan with baking spray. In a bowl, mix together the melted butter, peanut butter and mashed bananas. Mix to ensure it is all combined.
- In a lg bowl, mix to combine flour, both sugars, baking powder, and salt. I put gloves on and use my hands so to break up and brown sugar clumps. Make a well in the middle and add the 2 eggs. Using a strong whisk, whisk the eggs into the mixture then add the banana mixture. Whisk until everything is combined. You may want to use a folding spatula to ensure everything is mixed well and there are no flour pockets.
- Pour batter into prepared pan and bake for 45 minutes. Check with a toothpick. If it comes out with a few crumbs that is ok. The bread should be golden brown.
- Transfer to a cooling rack and let sit to cool for 15 minutes then remove from pan. Enjoy warm with some butter and honey or it is wonderful alone. It also tastes great toasted.
