Dubai Chocolate Brownies

minutesWhere do I begin? I tried Dubai chocolate last year at a wonderful baklava shop in Palo Alto. I was intrigued because I LOVE pistachios and chocolate. The bar cost ! It was by far the most delicious chocolate bar I had ever tried. It was a large bar and quite thick so it took about a week to finish. When I saw this recipe in our local newspaper, I had to make it. Let’s just say these are amazing. These were a hit with both family and friends. I also give plenty of baked goodies to our mailman, our UPS guy and the Fed Ex guy. EVERYONE requested more. I was able to find pistachio creme on Amazon as where I live, there are no shops that sell it. Let’s just say the creme is so good.
Ingredients
10 tablespoons unsalted butter, cut up into small pieces
1 1/4 cup sugar
3/4 cup + 2 Tablespoons unsweetened cocoa powder, such as Droste
1/4 teaspoon salt
1/2 teaspoon vanilla
2 cold eggs
1/2 cup flour
2 heaping Tablespoons pistachio creme
2 Tablespoons shelled lightly salted pistachios, chopped
Directions
- Preheat oven to 325. Line an 8×8 pan with parchment paper (leaving an overhang to make it easy to remove the brownies from the pan) and spray with baking spray.
- In a metal bowl over simmering water, combine butter, sugar, cocoa, and salt. Stirring occasional until the butter has melted and it has combined. It will look gritty but once everything is melted and combined remove from the heat. Allow to cool for about 10 minutes.
- Stir in vanilla with a wooden spoon. Add the eggs, one at time, stirring vigorously after each addition. When the batter looks thick, shiny, and well blended add the flour. and stir until all the pockets of flour are gone. Beat for 40 strokes with a wooden spoon or rubber spatula. Pour batter into prepared pan.
- Put the pistachio creme in a microwave safe bowl and heat for 15-20 seconds. Dollop the creme around the top of the brownies in 3 rows of three. Drag a knife through so to make swirls. Sprinkle with pistachios.
- Place in oven for 20-25 minutes, until a toothpick comes out slightly moist with batter. Let cool on a wire rack.
- Lift brownies out onto a cutting board and cut into even squares, roughly 16 squares.
