Ranch Fresh Corn Salad with Cherry Tomatoes, Avocados, and Fresh Herbs

minutesI love summer corn and I love playing with the flavors of sun sweetened corn with a salty or even mustard vinaigrette. I love summer because nature really gives us so many healthy and delicious ways to cook. What I love about this is you can either use raw corn or grill the corn with a little salted butter to bring out the natural sugars. You can play with the salad and add whatever you would enjoy. Add a favorite grain or roasted poblanos for a kick. Have fun and enjoy. It’s summer time.
Ingredients
6-8 ears of corn, raw or lightly grilled and then kernels removed from ears
1 pint cherry tomatoes, cut in half
1-2 avocados, diced
Fresh herbs: basil, cilantro, parsley, or and chives, chopped
Salty or Dijon Mustard vinaigrette
Directions
- In a decorative or festive medium bowl, toss all the ingredients together. Season with fresh ground pepper and finishing salt.
- Add a vinaigrette of choice or just a citrus olive oil and red wine vinegar and toss.
