Peach Streusel Cake

minutesI adapted this recipe from Milk Street. We are not big Plum eaters so I used peaches as I knew they would go perfectly with the ingredients in this cake. It was a hit and what even makes this recipe better is that you can make it for dessert or it would even be a perfect coffee cake for a brunch. It is light, moist and so delicious.
Streusel
1/2 cup sliced almonds, lightly toasted
1/2 cup flour
1/2 cup brown sugar
1/2 heaping teaspoon ground cardamom
1/2 heaping teaspoon coriander
1/4 heaping teaspoon allspice
1/4 teaspoon table salt
4 tablespoons salted butter, cut into 1/2 inch pieces and cool in temperature
- Cake
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon sour cream, ROOM TEMP
1/4 teaspoon almond extract
1 1/2 teaspoons vanilla extract
1 1/2 sticks salted butter, ROOM TEMP
1 1/4 cups white sugar
3 lg eggs, ROOM TEMP
8 peaches, skinned and cut into 8th
Directions
- In a medium bowl, stir together the second ingredient with everything but the butter. Lightly toast the almonds and when cool add to bowl. Add in the butter and with your fingers, incorporate the butter into the dry ingredients until it all resembles pea sized pieces. Place in freezer until ready to use.
- Preheat oven to 350. Using a baking spray, spray a 13×9 pan and line with parchment.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. In a small bowl whisk together sour cream, almond and vanilla extracts.
- In a stand mixture with a paddle attachment, beat butter with white sugar on medium until fluffy about 3-6 minutes. With the mixer running on medium low add the eggs, one at a time, beating until each egg is combined. Scrape the sides and increase speed and beat until mixture is fluffy about 1 minute.
- With the mixer, running on low, add 1/3 of the dry ingredients and then half the sour cream mixture and continue until all is incorporated. The batter will be thick.
- Transfer batter to prepared pan and smooth out. Add the sliced up peaches and make 3 rows. Bake for 25 minutes, remove from oven and sprinkle with the Streusel. Return cake to oven and continue to bake another 25 minutes. Once the streusel is golden brown and a toothpick comes out clean.
- Allow to cool at least an hour before serving.
