Pizza Oven Ratatouille

minutesWe love our pizza oven and we rarely do pizza. We tend to use it more for roasting vegetables, potatoes, meats, breads, and more. We have had so much fun with it and it was our 10 year wedding gift to one another. We have had it for almost 15 years. Depending on how hot the pizza oven is will determine how quickly the vegetables are cooked and also how you like your vegetables cooked. I like mine with a little char or caramelized.
Ingredients
4-6 summer squash, thickly cut
1 -2 pints Shishito peppers
8-12 Carmen red Italian sweet peppers
1 lb Roman green beans, cut in half
1-2 pints baby eggplant, halved
2 red onions, thickly cut up
Olive oil
Seasoning of choice
Salt and pepper
Directions
- Light the fire in the pizza oven, allow it to burn a few hours so that the temperature stays steady.
- Toss all the vegetables in a ceramic dish that is safe for a pizza oven or in a cast iron pan. Toss with olive oil and seasoning.
- Place in the pizza oven and after about 8-10 minutes, toss everything and place back for 5-15 minutes. Serve hot with meat or salad of choice.
