Braised Pork Chops with Tomato, Orange, and Chili

hoursI love this recipe. I don’t use my slow cooker that much but this recipe is so good. These pork chops have great flavor, moist and so good. Serve with couscous and a green vegetable.
Ingredients
2 Tablespoons olive oil
4-6 thick cut bine in pork chops
3 celery ribs, chopped
1 onion, chopped
4 garlic cloves, finely chopped
1/2-1 teaspoon dried hot chili peppers
1/2 cup full bodied red wine
Freshly squeezed orange juice from 1 orange then cut it up
Two 14 oz can chopped tomatoes
1 bay leaf
A few sprigs of oregano
Sea salt
Fresh Italian parsley, chopped for garnish
Couscous or roasted potatoes
Directions
- Everyone’s slow cooker is different so follow the instructions to your machine. My slow cooker’s insert comes out which I love so I don’t lose any flavor.
- Place the insert on the stove, over medium heat, allow to get hot add oil and wait 1 minute. Season the pork chops and if needed sear on each side for about 5 minutes preside, you may need to do in batches. Once the pork chops have a good browning on each side, add the celery, onion, garlic and red pepper flakes. Add the wine and scrape up any good flavor on the bottom. Add the orange juice and the orange pieces, tuck them around the chops, add the tomatoes, bay leaf, oregano and salt. Cover with lid and replace insert in slow cooker and cook on low for 4 1/2 hours. ****Sometimes I will cook to this point, once done allow to cool for about 30 minutes and place in the refrigerator. I can reheat the pork chops in the insert on the stove.
- When ready to serve, place a chop on each plate and spoon the couscous and serve with a spoon of the sauce. Garnish with the fresh parsley.
