Gingerbread Scones

minutesAn old friend sent me this recipe as I am a huge fan of all things ginger and gingerbread. These are so good and just make a cold morning warm and cozy. The house smells good and my kids wake up happy and love to enjoy these both before school, at school as a snack or as an afterschool treat. You can’t go wrong. YUM!
Ingredients
1 3/4 cups flour
3/4 cup old fashion oats
1/3 cup light brown sugar, packed
2 teaspoons ground ginger
1 1/2 teaspoons cinnamon
1/8 teaspoon ground cloves
1/4 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup cold butter, cut into pieces
Zest of 1 lemon
1/3 cup dried cranberries
1/2 cup buttermilk
2 1/2 Tablespoons unsulphured molasses
1 teaspoon vanilla
- Glaze
1/2 cup sifted powdered sugar
1 1/2 Tablespoons maple syrup
1/2 teaspoons molasses
1-2 teaspoons milk
Directions
- Preheat oven to 400. Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl of a mixer, whisk together flour, oats, sugar, spices, salt, baking powder, and baking soda, Using a fork or pastry cutter, cut in the cold butter until it looks crumbly. Stir in dried cranberries and lemon zest. In a separate bowl, whisk together buttermilk, molasses, and vanilla. Place the dough attachment, set the bowl with the dry ingredients on low speed and slowly add the buttermilk mixture to the flour mixture. Mix until just combined and begins to form a ball.
- Transfer dough to a lightly floured surface and gently knead four or five times. For the dough into a lg circle, roughly about 7 inches wide and 1 1/2 inches thick. Cut circle in half and cut each side the of the circle into thirds. Place on baking sheet.
- Place the prepared baking sheet on top of another baking sheet so the scones bottoms don’t brown to much. Bake for 20 minutes until golden brown and a toothpick comes out clean. Transfer to a cooling rack.
- For the glaze, combine all the ingredients and add more or less milk depending on your favorite type of glaze, thick or thin and then drizzle glaze over scones and enjoy.
