Malted Milk Vanilla or Chocolate Waffles

minutesBecause of Covid, I have been able to make a hot breakfast daily for my kids. I normally make a hot breakfast about 3 times during the week and always on the weekends. I love breakfast and so does my family. I play with this recipe as you can use either vanilla or chocolate malt powder. Use whatever you feel, they are delicious either way.
Ingredients
2 cups flour
1 Tablespoon baking powder
1/2 teaspoon salt
2 tablespoon malted milk powder, Nestle Carnation, chocolate or vanilla
2 teaspoons vanilla
4 eggs, separated
1/2 cup vegetable oil
1 3/4 cups milk
Directions
- Preheat waffle iron and grease with butter or spray. Combine flour, baking powder, salt, sugar, and malt powder. In another bowl, beat egg yolks until thickened. Add vanilla, vegetable oiled milk. Stir into dry ingredients and mix until smooth.
- In a clean bowl, beat egg whites until peaks arise but not dry and stiff. Using a large spatula fold the whites into the batter without over mixing and deflating the air. Set the batter aside for 5 minutes on the counter or in the refrigerator for up to an hour.
- Heat the waffle iron and then place 1 cup of batter and cook according to the instructions on your waffle iron. They should be golden and crisp.
- Remove and place on a warmed plate serve with melted butter and syrup.
