Agrodolce Tuna and Onions

minutesThis is easy and so good. My kids gobbled it up. I served it with cous cous and sautéed green beans. All the flavors and textures make this dish stand out. The best part it is quick, easy and healthy. Plus it tastes so good.
Ingredients
1 1/2lb tuna or skinless salmon, patted dry and cut into 1 inch cubes
2 teaspoons flour
Kosher salt and fresh ground pepper
3 Tablespoons extra virgin olive oil
2 medium red onions, cut in half and then sliced thin
3 Tablespoons pine nuts, lightly toasted
3 Tablespoons dried currants
1/2 teaspoon red pepper flakes
1 Tablespoon sugar
1/4 cup red wine vinegar
1/4 cup lightly packed fresh mint, chopped
Directions
- In a medium bowl, toss the fish with flour, 1 teaspoon salt and 1/2 teaspoon black pepper. In a 12 inch nonstick skillet over medium high heat, heat the oil until shimmering. Add the fish in even layers and cook without stirring until golden on the bottom, about 2 minutes. Stir once to even cooking around other pieces and cook until golden on other side about 1 minutes. Remove to a plate with a slotted spoon.
- Place the skillet back over medium high heat and add onions and pine nuts and 1/2 teaspoon salt. Cook, stirring occasionally until onions are softened and lightly browned, 3-5 minutes. Stir in currants, red pepper flakes, and sugar, then add the vinegar and 1/3 cup water. Bring to a simmer over medium high heat and cook stirring occasionally until syrupy about 2-3 minutes.
- Return fish to pan and any accumulated juices, stir to combine. Remove from heat and stir in the mint and season to taste with salt and fresh ground pepper. Serve with grain of choice and a drizzle of oil.
