Baked Potatoes are so warming and satisfying. When I am feeling blah and not really wanting much food and am sick of bowls of chicken noodle soup, I love a hot baked potato or yam. It is so easy to prepare. For baked potatoes, I like to rub with olive oil and coarse salt. For sweet potatoes and yams, rubbed with olive oil and a curry powder mix, such as Penzey’s New Curry powder. I like the skin to be crispy and it add to the texture and taste.
1 russet potato or yam/sweet potato
1 Tablespoon olive oil
1 Tablespoon coarse salt: Kosher or Sea for Russet or 1 TBSP curry powder for yam/sweet potato
- Preheat oven to 400.
- Using a dinner fork, poke the potato all over.
- Rub potato or sweet potato/yam in oil then salt or curry powder all over
- Place in oven for 1 hour, remove when soft and skin is crispy.
- Slice down the middle and serve with your favorite condiment.
