minutesTomatoes are one of my favorite things about summer. Nothing is better than a juicy, tomato. Raw or cooked, both ways are healthy and delicious. I love this recipe as it is so easy and what a great way to enjoy a perfect, summer tomato. Really you can do whatever you want. You can slice in half and if you have a favorite seasoning, use it. Since I have a garden full of fresh herbs, I prefer to use them.
Ingredients
3-4 lg tomatoes, cut in half
1 handful fresh basil, fresh oregano, parsley, chopped
1-2 cloves garlic, minced
Dash of red pepper flakes, optional
Salt and pepper
Olive oil
Directions
- Place the halved tomatoes on a parchment lined, rimmed baking sheet. Preheat oven to 375.
- In a bowl, add the fresh herbs, salt and pepper, minced garlic, red pepper flakes and olive oil. It should be pasty.
- Spread the mixture on each tomato. Place in the oven for 15-20. Turn the heat to 400 for an additional 5-10.
- You want the tomatoes to be soft and the herb mixture to be crust like. Serve as a delicious side dish to any meat dish or with scrambled eggs.
