Cardamom Coffee Banana Bread

minutesThis has three components I love: bananas. cardamom, and coffee. I had to make this the minute I found this recipe and it doesn’t disappoint. It is full of flavor and so moist. This is wonderful for an afternoon snack or I put it in my kid’s lunches for their snack for morning recess. It is quite delicious.
Ingredients
3 very ripe bananas, about 1 lb
2/3 cup packed light brown sugar
1 stick butter, melted
1/3 cup sour cream or full fat Greek yogurt (can use vanilla)
2 eggs
1 teaspoon vanilla
2 cups flour
1 1/2 Tablespoons instant espresso powder
1 teaspoon cardamom, freshly ground
1 teaspoon baking soda
1/2 teaspoon Kosher salt
3 oz dark chocolate chopped
- Coffee Glaze
2 teaspoons instant espresso powder
1/3 cup powdered sugar
Pinch of Kosher Salt
Directions
- Heat oven to 350. Line a 9×5 loaf pan with parchment paper, allow enough to hand over the sides.
- In a lg bowl, mash the bananas with a fork until smooth. Add the brown sugar, melted butter, sour cream, eggs, and vanilla-whisk to combine.
- Add the flour, espresso powder, cardamom, baking soda, and salt. Stir until just combined. Stir in chocolate and do not over mix.
- Transfer to prepared pan and spread in an even layer. Bake until a toothpick comes out mostly clean, with a few moist crumbs. About 55 to 60 minutes.
- Let cool 10 minutes in pan before removing from pan and allowing to cool on a wire rack. While it cools, make the glaze.
- Combine, espresso powder and 2 teaspoons water in a small bowl to dissolve. Add the powdered sugar and stir until smooth.
- Drizzle glaze over the bread. Allow to cool completely then enjoy.
