Cardamom Sugar Cookies

minutesI love this recipe as I am a huge fan of cardamom. When I was in Stockholm I loved the cardamom buns. One was enough or I was going to have to indulge each day. They were light and delicious with the flavor of cardamom. I was in Heaven. These are easy to make and you can slice and bake when you need them. I would double the recipe so you can enjoy some now and freeze the other log to enjoy later. the recipe below is a single recipe.
Ingredients
2 teaspoons freshly ground cardamom
1 cup flour
6 tablespoons evaporated cane sugar
1/2 cup butter, at room temperature
1/2 teaspoon kosher salt
1 teaspoon vanilla paste
1 Tablespoon heavy cream
1/4 cup mini chocolate chips
1 Tablespoon vanilla sugar, for sprinkling
Directions
- Crack open 24 cardamom pods and collect all the little black seeds. using a mortar and pestle grind the seeds until they resemble ground pepper.
- In a bowl of a stand mixer fitted with a paddle, combine flour, sugar, butter, salt, cardamom, and vanilla paste. Mix on low speed until mixture resembles cornmeal. Add the cream and mini chocolate chips and mix until combined.
- Form the dough into a log on a piece of parchment paper and using the paper to roll into an even log. Wrap in plastic wrap and refrigerate for 2 hours or up to two days. They can freeze up to 3 weeks.
- Preheat oven to 350. Line 2 cookie sheets with parchment and remove chilled dough and cut into 1/4 inch slices and arrange on both prepared cookie sheets. Sprinkle each cookie with some vanilla sugar and bake for 12-14 minutes.
- Let the cookies cool on cookie sheet for about 5 minutes and transfer to a wire rack to cool completely. Store in an airtight container at room temperature for unto two weeks.
