Citrus Chicken Breasts with Cherry Tomatoes, White Beans & Toasted Sesame Seeds

minutesThis is delicious. My family raved. It was so good, light and healthy. When life is so busy between after school sports, kids on different schedules, driving all over the planet, it is nice to come home, sit as a family and enjoy a simple, healthy meal.
Ingredients
3-4 bone in, skin on chicken breasts, each cut in half
1/2 teaspoons fresh black pepper
2 1/2 teaspoons kosher salt, divided
2 tablespoons olive oil
6 lg cloves of garlic, sliced
1/4-1/2 teaspoon red pepper flakes
1 lemon juiced, then sliced then
2 Tablespoons fresh oregano
2 (15oz cans) chickpeas, rinsed and drained
2 cups cherry tomatoes
2 Tablespoons toasted sesame seeds
Directions
- Preheat the oven to 375. Line a rimmed baking sheet with a couples sheets of parchment paper. Set aside.
- In a bowl, toss the chickpeas, tomatoes, oregano, garlic, lemon juice, red pepper flakes, and olive oil. Season with salt and pepper. Spread out on prepared pan.
- Place the chicken in the same bowl and drizzle with olive oil, salt and pepper. Wedge the chicken in amongst the tomatoes and chickpeas.
- Add the lemon slices to the top of the chicken pieces and sprinkle the whole dish with the sesame seeds.
- Place in the oven and cook for 40-50 minutes. Once the chicken is looking almost ready, increase the heat to 425 for 5 minutes to give everything a little texture.
- Serve with rice or couscous and a green vegetable of choice.
