Cranberry Sauce with Pomegranates

minutesI had thought I lost my Thanksgiving recipe file, paper not on the computer. I was desperate for my fresh cranberry relish recipe so I found this one in one of my favorite cookbooks. It was a hit. Everyone raved and everyone wanted the recipe. This is so good that I would make more for leftovers and to go with pork, duck, and elk.
Ingredients
1 bag fresh cranberries, picked over and rinsed
1/2 cup light brown sugar
1/4 cup pomegranate molasses
3 small thyme sprigs
1 cup pomegranate seeds
Directions
- In a medium saucepan, bring the cranberries, brown sugar, molasses and thyme to a boil over medium high heat, stirring frequently. Boil, stirring often, until most of the cranberries pop, about 5 minutes.
- Remove from the heat. Remove thyme sprigs and add the pomegranate seeds and mix well. Place in a decorative bowl and serve.
