Duck Meatball

minutesWe love duck. I had bought some duck breasts which we love to grill or sear in a pan. I thought trying ground duck would be delicious. In searching for a recipe, I found this and these do not disappoint. They have great flavor and texture and we really enjoyed them.
Ingredients
- 2 Tablespoons of olive oil-plus more for cooking 
- 1 medium yellow onion, minced 
- 1 pear, peeled and chopped 
- 2 teaspoons fresh ginger, minced 
- 2 cloves garlic, minced 
- 2 lbs ground duck 
- 1/2 lb pancetta 
- 1/2 teaspoon kosher salt 
- 1 teaspoon thyme 
- 1 teaspoon fresh rosemary, chopped 
- 1/2 teaspoon Dijon mustard 
- 1/2 teaspoon red pepper flakes 
- 1/2 teaspoon ground cumin 
- 1/2 teaspoon fresh ground pepper 
- 1/4 cup fresh parsley, chopped 
Directions
- Heat oil in a 10-12 inch saute pan, add onions, pears, ginger, and garlic until completely caramelized and liquid had evaporated. Chill for 1 hour.
- In a medium bowl, add the duck.Chop up the pancetta or find it and add to the duck and remaining ingredients. Chill for 1 hour.
- Form the duck and everything into 2 inch balls.
- Heat 1 teaspoon olive oil in a cast iron pan, until hot but not smoking. Brown the meatballs in batches. Cook until done, all the way through. About 7 min.
- Deglaze the pan with white wine. Season to taste over the meatballs
- Sprinkle parsley over top and serve with pasta, orzo or sweet potatoes.
