Easy, Delicious Meatballs

minutesThese are so easy to make and come together quickly. I only changed one thing in the recipe, I added fresh herbs. The first time I made these they were missing something. I added fresh chopped parsley but you could easily add fresh chopped oregano or basil. My kids love these. I usually serve with either homemade tomato sauce or if in a pinch, store bought. They go great for meatball subs for the kids or for us I like to serve with couscous.
Ingredients
3 tablespoons olive oil
1 Tablespoon Avocado oil
2 lg eggs
1 1/2 Panko Italian seasoned
1/2 cup whole milk
3/4 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon dried oregano
1/4 cup chopped parsley, basil OR oregano
2 oz fresh grated Parmesan cheese
1 1/4 lb ground beef
Tomato sauce or marinara sauce
Directions
- Preheat oven to 425 or make in the am and cover and refrigerate to cook in the evening. In a 9×9 baking dish, use the avocado oil to oil the dish. Set aside.
- In a bowl, combine egg, panko, milk, salt, garlic powder, oregano, several cranks pepper, Parmesan cheese, fresh herbs, and 3 Tablespoon oil, stirring powerfully. Allow to turn into a paste like consistency and let sit untouched for 10 minutes.
- Add half the ground beef and gently to not over mix incorporate then add remaining beef. Gently roll out 8 meatballs and place them in prepared dish. If cooking right away, place in oven. You can cover with plastic wrap and refrigerate overnight.
- Bake the meatballs for 15 minutes, then using a metal spoon dislodge them from the dish and gently roll them over to cook for an additional 5-7 minutes. If serving with tomato sauce, heat it up with the meatballs or in its own saucepan. When they reach 160 degrees with an instant read thermometer, remove from oven.
- Spoon tomato sauce on a plate and serve with a meatball or two on top.
