Hugo’s Avocado ToastCourse: BreakfastCuisine: AmericanDifficulty: EASY
Such a simple breakfast but so healthy and good brain and body food. I make these for my kids all the time. When making them for friends or my husband, I like to change it up and use feta cheese with a red pepper oil and add in some greens such as arugula. Sometimes I like to add shaved radishes and sliced tomatoes. You can get as creative as you want. I even will add a slice of prosciutto over the avocado and then top with greens and poached eggs. A few shakes of some Aleppo pepper and you have a delicious breakfast. Using good bread is key, I like a good multi grain slice, toasted with a drizzle of olive oil or a smear of butter. Play with it. Get creative. You can’t go wrong.
