Peach Blackberry Galette with Cardamom Pistachio Streusel

minutesThis was out of this world good. Something with the peaches, blackberries, pistachios and cardamon make an unforgettable treat. I have made this so many times and my family and friends all request it. The best part of this is it would be perfect for a brunch. Enjoy this fresh out of the oven with some vanilla whipped cream or a scoop of vanilla bean ice cream. This is a favorite. I love summer desserts with berries and stone fruits.
Pie
4 ripe peaches
5 oz box blackberries
2 Tablespoon brown sugar
1 tablespoon cornstarch
Juice of 1/2 a lemon
1 refrigerated pie crust or your favorite pie dough recipe
Egg Wash- 1 egg beaten with 1 Tablespoon water
2 Tablespoons raw sugar
- Streusel
1/2 cup, roasted, unsalted pistachios, lightly crushed
1/3 cup sugar
1 cardamon pod
1 Tablespoon flour
1 Tablespoon cold butter
Directions
- Preheat oven to 400. Line a baking sheet with parchment paper.
- Using a mortar and pestle or spice grinder, grind or crush the cardamon pod seeds.
- Make the streusel by combining pistachios, sugar, flour, butter, and cardamon. Use your fingers to really combine it well. Set aside in the refrigerator.
- Galette Filling: Combine peaches, brown sugar, cornstarch, and juice of half of lemon. Mix until peaches are coated and drain any excess liquid.
- Roll out the dough into a 12-14 inch diameter, and place on prepared baking pan with parchment paper.
- Add the blackberries to the peach mixture and give a quick toss. Pour the fruit in the middle of the prepared dough and spread out, but leave a 2 inch border around the galette.
- Add the streusel to the top of the fruit and with two hands crimp and fold the dough around the fruit.
- Brush the dough with an egg wash and sprinkle with raw sugar or vanilla sugar.
- Bake in the oven for 30-35 minutes until crust is golden in color.
