These are easy to make and so delicious. You can even make these ahead and freeze them. If you want to add some cheese, some fresh Parmesan cheese is wonderful sprinkled on top. My kids gobbles these up. They also love to take them for snacks.
2 packs of Boars Head Prosciutto
1 dozen eggs
1/2 cup freshly grated parmesan cheese
Salt and Freshly ground pepper
- Preheat the oven to 400. Spray muffin tins with baking spray.
- Line each muffin cup with 1 slice of prosciutto, making sure it overhangs a bit. Repeat with all the 12 cups.
- Crack 1 egg in each prosciutto cup. Add a sprinkle of cheese. Season with salt and pepper.
- Bake for 15 minutes, until egg has just set. All ow to sit in pan for 5 minutes then remove and eat hot or allow to cool and freeze in an air tight zip lock bag.
