Pumpkin Ginger Waffles

minutesThese are a house favorite and so delicious. Even my husband who isn’t the biggest pumpkin fan loves these. They are light and delicious and have great flavor.
Ingredients
1 1/4 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoon ground ginger
1/2 heaping teaspoon cinnamon
1/4 cup finely chopped crystallized ginger, optional
2 lg eggs
3/4 cup buttermilk
1/2 cup canned pumpkin puree
1/2 cup sugar
1 teaspoon vanilla extract
Directions
- Combine flour, baking powder, baking soda, salt, ground ginger, and cinnamon together in a large bowl. Set Aside.
- Whisk eggs, buttermilk, pumpkin, sugar, and vanilla in a medium bowl. Combine with flour mixture. Stir in butter and fold in if using the crystallized ginger. Do not over mix.
- Heat a waffle iron and make the waffles. These are delicious or you can freeze and toast to reheat.
- Serve with maple syrup
