minutesI am not a big beet fan. I do enjoy them but it is all in how they are prepared. I do enjoy beet salads with a spiced yogurt or a creamy cheese. This recipe is so easy and you will get a roasted beet. If you are using the next day, go ahead and make ahead.
Ingredients
1 lb beets, about 4 small beets
1/4 cup water
1 clove garlic
1 teaspoon olive oil
Salt and Fresh ground pepper
Directions
- Preheat oven to 425. Get out several pieces of heavy duty foil and place the cleaned and trimmed beets in the middle. Bring up the sides of the foil and add all the ingredients. Seal the foil to be air tight. Place in an oven proof dish.
- Place in the oven for 45-1 hour. You will be able to smell when it is done. Remove from oven and allow to sit for 10 minutes.
- Be careful to not burn yourself when opening the foil packet. Allow the beet to cool until you can handle and peel them. If they are small just quarter them or you might want to cut them into eights.
- Now they are ready for a salad or to use however you may want to you.
