My kids love this recipe. I get two bunches of the organic colorful carrots and trim them. I also remove the outer skin. I toss them with Penzey’s New Curry seasoning. I roast them at high heat and they caramelize and the natural sugars come out. This is my favorite way to eat carrots.
2 bunches carrots
New Curry Seasoning
- Preheat oven to 425. Trim stalks off carrots and peel off the outer skin. Place carrots on parchment lined baking sheet.
- Drizzle with olive oil, seasoning and salt.
- Place in the oven and roast for 20 minutes. Don’t allow to burn. If getting dark, lower the oven.
- Serve with a drizzle of hot honey.
