I love this recipe as it is simple and the results are always delicious. This can be used for other varieties of fish or even lean meats including beef. All I do is line a rimmed baking sheet with parchment, place the fillet of salmon on the prepared pan, season with salt and pepper or another dry seasoning. Drizzle olive oil and add a few slices of fresh lemon, lime or orange. Allow the fish to slowly bake and then when it is almost finished, turn the heat up so the fish crusts up a bit to give it some texture. It is wonderfully delicious. A perfect way to eat wild salmon.
1 1/2 lb salmon fillet
Kosher salt and fresh ground pepper
1 lemon, sliced thin
- Preheat over to 325. Line a baking sheet with a couple layers of parchment paper, this will allow for easy clean up as well as the fish not sticking to the pan.
- Season the fish, drizzle with olive oil and add slices of lemon on top and tucked underneath.
- Place in the over for about 30 minutes and then turn the heat up to 425/450 and watch for 3-5 minutes so the fish darkens but doesn’t burn.
- Serve hot with rice and a green vegetable.
