Spiced Apple Coffee Cake

minutesThis is so good and it makes the house smell so good. It is down right YUMMY!! This is wonderful, easy and when I make it, I never make the glaze. I just dust it with powdered sugar and my kids gobble it up. They love it in their lunches to have at recess or my son will take a large piece and eat it for breakfast after water polo practice at 5:30 am. You can’t go wrong with this delicious perfection.
Ingredients
1 3/4 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
3 tart apples,Granny Smith, corded and peeled and chopped (total weight 1lb)
2 Tablespoons strained orange juice or apple juice
1/3 cup firmly packed brown sugar
1 1/2 teaspoon ground cardamon
1 teaspoon ground cinnamon
1/2 cup butter, 1 stick, softened
8 oz cream cheese, softened
1 1/2 cups sugar
1 teaspoon vanilla
2 large eggs
- Vanilla Glaze
3/4 cup powdered sugar, sifted
2 Tablespoons condensed milk (warmed)
1/2 teaspoon vanilla
Directions
- Preheat oven to 350. grease and flour or sugar a 9 inch square baking pan. *If using a glass dish lower the heat to 325.
- In a small bowl, stir together the flour, baking powder and salt.
- In another bowl, toss apples with juice. In a small bowl, combine brown sugar with spices and toss with apples.
- In another bowl, using an electric hand mixer on medium speed, cream together butter, cream cheese, sugar, and vanilla until light. Add the eggs, one at time, beating well in-between each addition. Reduce mixer to low and add the flour mixture slowly. Using a large rubber spatula, fold in the apples and all the accumulated juices in the bowl. Do not overmix.
- Spoon batter into prepared pan and make sure it is even.
- Bake for around 55 minutes until golden and when a toothpick comes out clean. Transfer to a wire rack and allow to rest for 5 minutes.
- Remove from pan and now drizzle the glaze over the cake. If not using the glaze, allow to cool completely and serve with a dusting of powdered sugar or vanilla whipped cream.
- Vanilla Glaze
- Mix together all the ingredients in a bowl until desired consistency. If too thick, add more of the warmed milk, a teaspoon at a time.
