Spiced Blueberry Oatmeal Bread

minutesI had extra yogurt and blueberries on hand that needed to be eaten. I wanted to make muffins or a sweet but healthy bread my kids could enjoy as a snack or toasted in the morning with honey. I found this recipe at foodiecrush, but added more flavor and moisture to the original recipe.
Ingredients
1 cup fresh blueberries, rinsed
2 cups all purpose flour or whole wheat flour or a cup of each + 1 Tablespoon
1 cup sugar
1 teaspoon cinnamon and/or ginger or a 1/2 teaspoon of both or baking spice
2 teaspoons baking powder
1 teaspoon salt
1 cup greek yogurt, whole or 2% or fat free (vanilla yogurt works as well)
2 eggs
1/2 cup butter, melted and cooled slightly
1 teaspoon vanilla
1/2 cup old fashion oats
2 teaspoons vanilla sugar for sprinkling before baking
Directions
- Preheat oven to 375. Line a 9×5 inch loaf pan with parchment and spray with Pam with flour or butter and lightly flour
- In a small bowl toss the blueberries with 1 Tablespoon flour.
- In a large bowl, whisk 2 cups flour, sugar, spices, baking powder, and salt. In another bowl, mix yogurt, eggs, melted buttered vanilla together. Fold the wet ingredients into the dry. Add blueberries and the oats, carefully and combine together.
- Scrape mixture into prepared pan. Sprinkle with vanilla sugar and bake for 50-55 minutes until golden brown and a tooth pick comes out clean. Remove from oven and leave in the pan for 5 minutes. Remove from pan and allow to cool to room temperature. Enjoy toasted with a drizzle of honey or just heated through.
