The Best Blueberry Malt Pancakes

minutesWhere do I begin? I am someone who get’s up early to make a hot breakfast for my family, especially my two kids. I love to do it. I would love to make breakfast for people. Start the day off right, with a good breakfast and a smile. These pancakes are tops. It is worth buying the Carnation Malt Powder. These were a huge hit. The next time I made them I doubled the recipe so my kids could reheat pancakes all week. I have made these with both with buttermilk and with vanilla Greek yogurt. Both taste great. *******You can substitute 2/3 cup Greek yogurt (any fat level) mixed well with 1 1/3 cups water. Do not use milk powder or a mixture of milk and lemon juice. Weigh the flour-these turn out much better.
Ingredients
3 Tablespoons melted and cooled butter
2 tablespoons butter, cut into pieces for cooking
10 oz or 238 grams flour (roughly 2 C but best to weigh)
3 Tablespoons malted milk powder
2 Tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
1 lg egg
1 1/2 cups blueberries (213 grams)
1/2 teaspoon vegetable oil for cooking
Syrup, honey or whipped cream for topping
Directions
- Whisk flour, malt powder, sugar, baking powder, baking soda, and salt together in a medium bowl. Whisk buttermilk, egg,and melted butter together in another bowl. Make a well in the center of the flour mix and pour in the buttermilk mixture. Whisk until just combined. A few lumps may remain. Fold in blueberries.
- Heat a griddle to 325 and you should be able to cook 6 pancakes at a time. If using a nonstick pan, heat over medium heat and with the oil gently and carefully rub it all over the griddle or pan.
- Melt a piece or two of butter in the pan, using a soup ladle, pour the pancake batter on the pan or griddle. Once it begins to bubble, after about 2-3 minutes, gently turn over and cook for 1 more minute.
- Serve either on a warmed baking sheet or to warmed plates and serve with your favorite topping.With the leftovers I wrap each pancake loosely in wax paper and place them all in a ziplock bag and keep in the refrigerator or you can freeze them like that as well.
