Vanilla Birthday Cake with Oreo Frosting

minutesMy daughter loves all things cookies and cream. She is a big fan of Oreo’s which I don’t buy since I make plenty of good cookies. However, every year on her birthday she requests an Oreo Cake. I have made Oreo Cheesecakes, Cookies and Cream ice cream cakes, Oreo cakes and this year the request was for a vanilla cake with Oreo frosting. I used a vanilla recipe I had for cupcakes and was hoping to make it fit a 9×13, it did not so I went with a 9×9. Next year, I will double the batter and make 2 9×9 to make a better looking cake. I definitely had enough frosting. I would have put more crumbled Oreos in the middle of the cake as well as added some cherry or raspberry jam to give it some depth of flavor. ****Double the cake recipe to make in a 9x13x2 pan or to make two 9×9 cakes to layer on top of one another.
********The eggs and buttermilk need to be at room temp, about 15-30 minutes depending on season
Ingredients
1 cup + 2 Tablespoons flour
1/2 cup + 2 Tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
3 Tablespoons butter, soft and cut into pieces
2/3 cup buttermilk, room temperature
2 lg eggs, room temperature
3 Tablespoons vegetable oil
1 1/2 teaspoons vanilla
- Oreo Cookie Frosting
10 Tablespoons salted butter, room temp
1 cup cream cheese, room temp
4 cups powdered sugar
2 teaspoons vanilla
3/4 cup crumbled oreo cookies (more if layering cakes)
2 tablespoons milk
6 oreo’s whole for decoration
Make the Cake
- Preheat oven to 350. Line either a cupcake cake pan with 12 liners or line a 9×9 pan with parchment paper.
- In a bowl of a stand mixer fitter with a paddle attachment, combine flour, sugar, baking powder, baking soda and a pinch of salt. Stir to combine. Add the butter and mix on low until the mixture resembles sand and butter is evenly distributed.
- In a bowl or lg measuring cup, whisk eggs, buttermilk, oil and vanilla. Add half the liquid and mix on medium low, add the rest of the liquid and allow to combine. Once combined, mix on medium speed for 30 seconds. Scrape down the sides and blend again for 5 seconds.
- Pour the batter into the prepared cake pan or divide the batter into the cupcake liners. Bake the cake for about 15-18 minutes. If making cupcakes, bake for 18 minutes. Remove from oven and allow to sit about 8 minutes, remove to a wire wrack and allow to cool.
- Frosting
- In a bowl of a stand mixer, beat the butter and cream cheese together with the paddle attachment. Beat for about 1 minutes. Add the powdered sugar and a pinch of salt and continue to mix on low.
- Raise the heat to medium, and beat 2 minutes until everything is creamy. Add the vanilla and combine.
- Add the chopped Oreo’s and mix well. If frosting is stiff add the milk, a Tablespoon at a time. Mix everything well until completely blended.
- When ready to assemble, Place one cake on a serving dish and cover with frosting then with some jam and then followed with the crumbled Oreo’s. Add the next layer and frost the cake. You can decorate the sides of the cake with more crumbled oreo’s. I always cut a few Oreo’s in half and use for decoration.
