Vanilla Cinnamon Waffles

minutesThese are simple and so good. I usually double this recipe, THIS RECIPE IS NOT DOUBLED, so that the kids can enjoy for more than 1-2 mornings. They are light and delicious and the flavor is so good. My kids like to toast them and then drizzle melted butter or even make cinnamon sugar toast.
Ingredients
1 stick butter, melted
2 cups flour
2 Tablespoons packed light brown sugar
1 Tablespoon ground cinnamon
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 lg eggs
1 3/4 cups milk
2 teaspoon vanilla
Maple syrup for serving
Directions
- Melt the butter, allow to cool a bit.
- In a bowl, add flour, brown sugar, cinnamon, baking powder, and salt. Whisk together to break up.
- Place 2 lg eggs, milk, and vanilla in a medium bowl and whisk well. Slowly, pour in the melted butter. Add the egg mixture to the flour mixture and stir until just combined.
- Heat the waffle iron according to the instructions, have the baking spray near by so waffles don’t stick while cooking.
- Pour some of the batter onto the prepared waffle iron and close the top. Allow to cook according to instructions or to your desired preparedness.
- Serve right away or keep warm in a preheated oven set to 200. Wrap the cooled leftovers, in wax paper and place in a ziplock bag. Refrigerate and reheat in a toaster oven.
